Nice to hear that you have decided to join PAF. Please let me know if you could not find the related information on PAF official website http://www.http://www.paf.gov.pk/ and the recruitment website http://www.joinpaf.gov.pk/ or some booklet etc from recruitment center of PAF. I see that they do have some recruitment / eligibility related information at joinpaf.gov.pk but not about other job details.

Hi thanks for your response but I have already been through these websites and went through the officer's career brochure as well but still my query remain unresolved.

So did I, your point seems valid. I will try to get some information from PAF officers about education officers and update. Generally as I understand from Army and PN, education officers work in management of schools, colleges and other education establishments within armed forces.
Here are some of the resources which might help. They do have education related activities at PAF academies and other education establishments which includes imparting formal qualifications (BSc) and multiple other areas as described in the links below:-
