Namak Paray Recipe

Ingredients

All purpose flour 125 gm
Clarified butter 1 tbsp
Water as required for kneading
Salt 1/2 tsp
Oil or clarified butter for frying

Cooking Directions

Add salt, clarified butter and water in all purpose flour and make dough.
Then make balls and roll on by rolling pin.
Now take a sharp knife and cut into namak para shapes at 1 inch distance.
Then again make cuts on 60 degree angle of same size.
Now it will become in form of paray.
Apply same process, and fry on low heat in clarified butter/ghee.

I had never had them this way, with a spoon in a bowl and the chatnian on top, until one fateful day on a visit to the old city. Saw it and thought it was pretty weird. Had it and it changed my life forever.

Then the bun-samosa in Karachi. That was love at first bite as well.

I prefer this way, There is a chain in UAE “Arab Udupi”, Indian restaurant, They have very delicious Alo Samosa and serve like this.

Samosa + Meethi chutney + Hari Chutney + Onion cut small cubes
